- 1 1/5 cups onion, chopped
- 1/2 green bell pepper, chopped
- 2 cloves garlic, minced
- 1/2 tsp olive oil
- 1 tsp cumin
- 1 tsp oregano
- 1/4 tsp cayenne pepper
- 1/4 tsp salt
- 1 cup chicken broth
- 19 ounces cannellini beans, drained and rinsed
- 2 cups white turkey or ground turkey, cooked (and cubed, if not ground)
1. Use a large saucepan to cook onions, bell peppers and garlic in oil until tender.
2. Add cumin, oregano, cayenne pepper, and salt.
3. Cook for 1 minute.
4. Stir in beans, broth and turkey.
5. Bring to a boil.
6. Reduce heat and summer uncovered for 30 minutes or until slightly thickened.
